Ingredient Substitutions

  • Almond Flour: You can make pancakes with other flours like regular wheat flour or coconut flour, however the measurements and texture will be different and the texture.
  • Eggs: Substitute with flax egg if you are vegan.
  • Blueberries: You can use any berry you like. You can even substitute the berries out for chocolate chips! Or just have plain pancakes!
  • Baking Powder: I recommend using baking powder as this is going to help your pancakes rise and become more fluffy. Because almond flour is a very dense flour, baking powder will help improve the pancake texture.
  • Vanilla Extract: If you can, use natural vanilla extract as it tastes so much better. This is a key ingredient as it will help mask any cannabis taste.
  • Maple Syrup: The best maple syrup is natural maple syrup with no added sugars or filler ingredients. I love using Canadian maple syrup - but that might be biased since I’m Canadian :) For keto substitutions, look for a maple syrup that is made with monkfruit/erythritol instead.
  • Cannabis Coconut Oil: You can substitute coconut oil with MCT oil or even infused olive oil.

TIPS & TRICKS

  • If you’re planning to mix the batter by hand, make sure you whisk it well! A smoother battery will create a more fluffy and even pancake.
  • When adding the blueberries to your batter, be careful not to break them. The blueberries will naturally “explode” a little when you’re cooking them on the hot pan.
  • Depending on how good your non-stick pan is, you might not even need to add any oil to the pan. I find that if you add too much oil, the pancake can get too soggy.
  • I recommend putting the cooked pancakes onto a wired cooling tray. This will prevent any condensation build up at the bottom of the pancake before plating.

INGREDIENTS

Pancakes

  • 1 cup almond flour
  • 2 eggs
  • 1 cup blueberries
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1 tbsp olive oil

Infused Maple Syrup

INSTRUCTIONS

  1. Combine the flour, baking powder, eggs, vanilla extract together in a large mixing bowl.
  2. Add the blueberries to the batter and mix gently. Avoid crushing the blueberries as they will naturally break down a bit during the cooking process.
  3. Heat up a non-stick pan to low-medium heat and add olive oil to the pan.
  4. Using an ice cream scoop, scoop the batter into individual small pancakes onto the pan.
  5. Cook for 3-4 minutes on each side, or until golden brown.
  6. Once the pancakes are done cooking, place them on a wired cooling tray. This will help prevent your pancakes from getting too moist.
  7. Stack the pancakes on top of each other on a serving plate.
  8. In a small bowl, microwave your cannabis-infused coconut oil until it turns to liquid form.
  9. Add the maple syrup to the coconut oil and stir until combined.
  10. Pour the infused maple syrup on top of the pancakes.
