Ingredient Substitutions

  • Shallot: Don’t have or like shallots? Feel free to use an onion or even green onion instead.
  • Chinese Five Spice Powder: If you can’t find chinese 5 spice powder at your local grocery store, or you don’t want to make it yourself, feel free to use another spice blend of your choice that’s similar.
  • Tamari/Soy Sauce: I prefer to use tamari for this recipe as it adds a really nice flavour but if you don’t have that, soy sauce will certainly do.
  • Quality olive oil: This ingredient is important because it’s the base of your recipe so try to use a good quality one to avoid any flavour variation once heated.

TIPS & TRICKS

  • When you fry up your shallots and garlic, make sure you get them crispy but you don’t want them to be burnt!
  • The spice level is very customizable, if you want it to be a bit less spicy, just add less chili flakes.

Recipe

SERVINGS: 1 cup

TIME REQUIRED: 3-4 hours

Ingredients

  • Your herb of choice
  • 1 cup high quality olive oil
  • 2-3 tbsps toasted sesame seeds
  • 2-3 tbsps chili flakes
  • 2 tbsps tamari or soy sauce
  • 1 tbsp Chinese five spice powder
  • 2-3 star anise
  • 1 whole garlic
  • 1 shallot
  • 1 tsp salt

Instructions - LEVO II Method

  1. Grind up your herb and add to the LEVO II machine.
  2. Decarb/activate for 30 minutes at 220 degrees F.
  3. While you are waiting for the flower to decarb, heat up a medium size pot.
  4. Dice your garlic and shallots and add to the hot pan. You want to get the pieces super crispy but not burnt!
  5. Add the rest of the ingredients except for the soy sauce.
  6. Simmer in the olive oil for 10-15 minutes.
  7. Add the soy sauce and turn off the stove.
  8. When your flower is finished decarbing, add the chili oil mixture into your LEVO II.
  9. Infuse for 2-3 hours at 150 degrees F.
  10. When the infusion is complete, dispense into a glass jar and scoop out the ingredients from the LEVO II machine and into your glass jar.
  11. Store in the fridge for up to one month!
  12. Enjoy!

Instructions - Oven & Stovetop Method

  1. Preheat your oven to 240°F and ensure that the wire racks are placed on the middle level of your oven.
  2. Break up your cannabis flower into small pieces or gently with a grinder.
  3. Lay a piece of parchment paper onto a baking tray.
  4. Spread the cannabis flower evenly onto the parchment paper.
  5. Once the oven is preheated to the desired temperature, place the baking tray into the oven for 30-45 minutes. Check on the cannabis flower periodically to ensure that it does not burn. Your cannabis flower is ready when it turns into a medium rich brown colour.
  6. Using oven mitts, remove the baking tray from the oven and set aside.
  7. In the meantime, heat up a medium pot on your oven to medium heat and add in your shallots and garlic to get them nice and crispy (but not burnt!)
  8. Add the olive oil and decarboxylated cannabis flower to the pot along with your herbs and spices.
  9. Allow the cannabis oil mixture to simmer on low-medium heat for at least 30 minutes, up to 2 hours. Ensure you periodically check in on the oil to ensure that the cannabis flower does not burn.
  10. After the infusion is complete, use a mesh sieve to separate the cannabis flower from the infused chili oil.
  11. Transfer the infused oil to a glass container.
  12. Allow the infused chili oil to fully cool before storing away.
  13. Store your cannabis infused chili oil in a dark cool cupboard for up to 1 year.

A: I would say the ingredients in this recipe make a medium spice level chili oil but you can easily make it more or less spicy based on the quantity of chili flakes you add in!
