This recipe for smashed creamer potatoes is the perfect blend of crispy and creamy, offering a delightful twist with a touch of cannabis-infused olive oil. The potatoes are first boiled to soften, then smashed and baked to achieve a crispy exterior. Topped with a zesty, dairy-free yogurt crema and fresh chives, these potatoes make for a flavorful side dish or a satisfying snack. The addition of cannabis olive oil adds a subtle earthy note, making it a unique and enjoyable treat.

Ingredient Substitutions

  • Creamer Potatoes: You can use any type of potato for this recipe but I like to use the little creamer potatoes. I love the the ones from The Little Potato Company because they’re pre-washed and come a clean package.
  • Dairy Free Yogurt: I used a cashew-coconut yogurt but feel free to use coconut yogurt, or regular cows milk yogurt.
  • Chives: Sometimes I use chives, sometimes I use green onions. If you’re looking for just a garnish, opt for the chives. If you enjoy the green onion flavour, opt for that instead.
  • Cannabis Olive Oil: I wouldn’t recommend using any other type of cannabis oil as olive oil is going to work best with this potato dish. The cannabis olive oil will be mixed in with the dairy free yogurt.
  • Regular Olive Oil: You’ll need regular olive oil for actually drizzling on top of the potatoes.
  • Lime Juice: Must have ingredient! Lime juice is going to give the zing! to your crema.
  • Seasonings: Use any seasonings, herbs and spices that you have. The potatoes can be mediterranean, classic, greek, italian, whatever you want it to be!

TIPS & TRICKS

  • I boiled the potatoes until they were semi-soft before oven baking them just to save time, and keep more moisture in the potatoes. I find that if I was just to oven bake the potatoes, it would take twice as long and be more dry.
  • When it comes to potatoes, it’s always better to overs eason than under season imo! Be generous with the herbs and spices and you’ll thank me later.

TIME REQUIRED: 40 minutes

INGREDIENTS

  • 680 grams creamer potatoes
  • 3-4 stalks of chives
  • 100 grams dairy free yogurt
  • 1 tsp cannabis olive oil
  • 1 lime
  • 2 tbsps olive oil
  • 1 tbsp salt
  • 1/2 tbsp pepper
  • 1 tbsp paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp dried parsley

INSTRUCTIONS

  1. Preheat oven to 400F.
  2. Add water to a medium pot on high heat until the water boils.
  3. Boil the creamer potatoes with salt until medium soft.
  4. When the potatoes are finished cooking, drain the water.
  5. Lay the potatoes on a baking tray with parchment paper.
  6. Using a fork, smash the potatoes until flat.
  7. Drizzle olive oil over the potatoes, garnish generously.
  8. Bake the potatoes for 10-15 minutes, or until crispy.
  9. While you are waiting for the potatoes to bake, combine the dairy free yogurt, cannabis olive oil and lime juice together in a small bowl.
  10. Remove the potatoes from the oven and garnish with the crema and chopped up chives.

Q: Can I use regular yogurt instead of dairy-free yogurt?

A: Yes, you can substitute dairy-free yogurt with regular yogurt if you prefer. Greek yogurt is a great option as it adds a creamy texture and tangy flavor that pairs well with the lime and chives.

Q: What if I don’t have creamer potatoes?

A: If you don't have creamer potatoes, you can use any small potato variety, such as baby reds or fingerlings. Just make sure to adjust the boiling time based on the size of the potatoes to ensure they are cooked to the right consistency before smashing and baking.
