It’s my birthday, I’ll get high if I want to… and I do! This is why I’m here sharing my latest creation – a cannabis-infused birthday cake, aka a weed cake. It's super simple to make and incredibly delicious. The flavours meld together beautifully, creating a fantastic dessert that also offers a discreet way to get high. I love infusing these moments into my life; it makes the whole consumption experience more accepted for me and those around me.

INGREDIENTS

Cake

  • 2 cups all-purpose flour, spooned into measuring cup and levelled off with back edge of a knife
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 10 tablespoons unsalted butter, softened
  • 2 tablespoons cannabutter softened
  • 1½ cups granulated sugar
  • 6 large egg whites, at room temperature
  • ¾ cup whole milk, at room temperature
  • 3 teaspoons vanilla extract
  • Sprinkles

Buttercream icing

  • 10 tablespoons unsalted butter, softened
  • 2 tablespoons cannabutter softened
  • 4 ounces cream cheese, at room temperature
  • 6 cups confectioners' sugar
  • 3 teaspoons vanilla extract
  • Pinch salt

INSTRUCTIONS

  1. Preheat the oven to 350°F.
  2. Brush butter onto two 8-inch non-stick cake pans and set aside.
  3. In a medium bowl, whisk together the flour, baking powder and salt.
  4. Place the butter and cannabutter and sugar in a stand mixer bowl and bet on medium speed for 5 minutes, or until the butter is soft and light. Beat in vanilla extract.
  5. In a separate bowl, whisk together egg whites and milk until combined.
  6. Gradually add ⅓ of the flour mixture followed by ⅓ of the milk mixture into the stand mixture on low. Repeat until all the ingredients are incorporated.
  7. Pour the cake batter into the two 8-inch non-stick cake pans and bake in the oven for 30-35 minutes.
  8. While the cake is baking, prepare the buttercream icing. In a bowl of a stand mixer, cream the butter, cannabutter, and cream cheese until creamy and well combined.
  9. Gradually add the confectioners’ sugar and beat in the vanilla and salt. If the frosting is too thick, add more milk. If the frosting is too viscose, add more confectioner sugar.
  10. Once the cake is finished baking, allow it to cool for 10 minutes before transferring to a wire rack. Allow it to cool completely on the wire rack.
  11. Place one of the cake rounds on a cake stand and ice it until fully covered.
  12. Stack the second cake round on top of the cake and ice until fully covered.
  13. Decorate with sprinkles and enjoy!

A: If the frosting is too thick, gradually add more milk, a tablespoon at a time, until you reach the desired consistency. If it's too thin, add more confectioners' sugar until it thickens up.

Q: How can I prevent my cake from sticking to the pans?

A: To prevent sticking, ensure you properly grease the pans with butter and line the bottom with parchment paper. This creates a non-stick surface that makes removing the cakes much easier.
