What is Hot Honey?

Let's dive into the spicy-sweet world of hot honey! Originating from the Southern United States, this culinary gem has a rich history rooted in combining the warmth of honey with a kick of heat. Traditionally crafted by infusing honey with chili peppers, hot honey has made its way from kitchen experiments to becoming a culinary sensation.

The balance of sweetness and spiciness makes it a versatile condiment, perfect for drizzling on everything from pizza to fried chicken. Its popularity has soared in recent years, and it's not hard to see why. Hot honey adds a layer of complexity to both sweet and savoury dishes, elevating everything it touches.

Ingredient Substitutions

  • Raw Honey: Raw unpasteurized honey is going to be the most nutrient rich honey that you can get. Raw honey is the least processed type of honey out there and generally is more expensive, but it’s worth it to invest in higher quality ingredients
  • Cannabis Infused Coconut Oil: Infused coconut oil is a staple infusion every cannabis lover should have in their kitchen! It’s versatile for cooking and for making cannabis creams. For this recipe, the cannabis coconut oil will be the main source for cannabinoids. Here is how to make cannabis coconut oil.
  • Chili Flakes: Use any type of chili flakes to add heat to your honey infusion. For a regular canna honey, opt out of the chili flakes.
  • Kief: This is totally optional, but I added raw cannabis to my infusion for added benefits. Raw cannabis has shown to offer anti-inflammatory benefits. I treat it like any other raw superfood. Kief won’t have any THC or CBD in it unless it has been activated (meaning heat has been applied to the kief for at least 30 minutes at 240°F). Raw cannabis contains the precursor cannabinoids to THC and CBD, which are THCA and CBDA.

TIPS & TRICKS

  • Before using your cannabis hot honey, heat it up over the stove or in the microwave until it is warm enough so that the coconut oil is melted. Unrefined coconut oil turns to solid when it is at room temperature so before using the canna hot honey, you will need to bring it back to a liquid state.

TIME REQUIRED: 10 mins

Ingredients

  • 500 grams unpasteurized honey
  • 2 tablespoons infused coconut oil
  • 2 tablespoons chili flakes
  • 3.5 grams dried cannabis flower
  • Optional: 1 tsp kief

Instructions - LEVO II or LEVO C Method

  1. Break up your cannabis flower into small pieces or gently with a grinder.
  2. Add the cannabis flower to the LEVO herb pod.
  3. Decarboxylate the cannabis using the ‘Activate’ Setting on your LEVO for 45 minutes at 240°F. Your cannabis flower is ready when it turns into a medium rich brown colour.
  4. Once the cannabis is finished decarboxylating, add the honey, coconut oil and chili flakes into the reservoir.
  5. Select the ‘Infuse’ Setting on your LEVO for 1.5-2 hours at 170°F.
  6. After the infusion is complete, transfer the infused hot honey to a glass container and add the raw kief and mix well. Allow the honey to full cool before storing away.
  7. Store your cannabis hot honey in a dark cool cupboard for up to 1 year.

Instructions - Oven & Stovetop Method

  1. Preheat your oven to 240°F and ensure that the wire racks are placed on the middle level of your oven.
  2. Break up your cannabis flower into small pieces or gently with a grinder.
  3. Lay a piece of parchment paper onto a baking tray.
  4. Spread the cannabis flower evenly onto the parchment paper.
  5. Once the oven is preheated to the desired temperature, place the baking tray into the oven for 30-45 minutes. Check on the cannabis flower periodically to ensure that it does not burn. Your cannabis flower is ready when it turns into a medium rich brown colour.
  6. Using oven mitts, remove the baking tray from the oven and set aside.
  7. Heat up a small pot on your oven to medium heat.
  8. Add the honey, coconut oil, chili flakes, and decarboxylated cannabis flower to the pot.
  9. Allow the cannabis honey honey mixture to simmer on low-medium heat for at least 30 minutes, up to 2 hours. Ensure you periodically check in on the honey to ensure that the cannabis flower does not burn.
  10. After the infusion is complete, use a mesh sieve to separate the cannabis flower from the infused honey.
  11. Transfer the cannabis honey to a glass container.
  12. Allow the honey to fully cool before storing away.
  13. Store your cannabis hot honey in a dark cool cupboard for up to 1 year.
