- Rigatoni Pasta: Use any pasta shape that you like. I chose rigatoni for this recipe because I like how rigatoni picks up alot of sauce.
- Cremini Mushrooms: You can use any mushroom you like, white mushrooms, button mushrooms, and much more!
- Garlic Cloves: If you’re a garlic lover like me, don’t be shy with the garlic! The aromas that you get from sautéing garlic with shallots and mushrooms is absolutely incredible.
- Coconut Milk/Cream: You can use either a coconut milk or cream for this recipe. Cream is going to give the pasta a thicker consistency, and milk is going to be less thick of a sauce.
- Fresh Parsley: If you don’t have fresh parsley, use dried parsley flakes.
- Vegan Parmesan Cheese: For a non-vegan option, use regular parmesan cheese or even pecorino romano. Any pungent cheese will do!
- Cannabis Infused Olive Oil: You could technically substitute the cannabis olive oil for MCT oil, or even a cannabis butter. If you want to use cannabis butter instead, add the cannabutter to the mushrooms instead of the sauce.

- Make sure you add the cannabis olive oil directly to the coconut milk and cream. Cannabinoids are lipid which means they bind better to fat based ingredients. The last thing you want is to leave any cannabis oil on the pan!
- Cut all your ingredients ahead of time so that you have a mise-en-place situation. Because there are so many little ingredients in this dish, you’ll want to make sure you have everything washed and cut up so you can just focus on cooking.

INGREDIENTS
- 1 cup dried rigatoni
- 2 cups cremini mushrooms
- 1 shallot
- 5 garlic cloves
- 1 can coconut milk
- 1 tsp cannabis infused olive oil
- 1/2 cup chopped parsley
- 1/2 cup vegan parmesan cheese
INSTRUCTIONS
- Cook the pasta following the instructions on the bag. Drain the pasta water and set the pasta aside.
- Dice and mince the garlic, shallots, and parsley, and set aside.
- Slice the cremini mushrooms into thin slices.
- Combine the cannabis infused olive oil with the coconut milk. You can simply add the oil to the can and stir until the oil is incorporated.
- Heat up a large pan to medium high heat and add a generous amount of olive oil.
- Once the oil is hot, add the shallots and garlic to the pan.
- Add the mushrooms to the pan before the garlic and shallots turn light brown. Allow them to caramelize.
- Add the cooked pasta into the pan, and pour the infused coconut milk.
- Toss the pasta until everything is incorporated.
- Turn off the heat and add in the parsley and half of the vegan parmesan cheese.
- Plate the pasta and garnish with more vegan cheese.
