Cannabis cookies are honestly one of my favourite forms of edibles. I think it’s the perfect menu item that showcases the evolution of cannabis-infused treats, this is why today I’m sharing my Cannabis Infused Oatmeal Chocolate Chip Cookies recipes. In the earlier days, cannabis cookies were among the limited options discussed broadly in the world of edibles. However, as the field of cannabis science has grown, so has the realm of possibilities for experimenting with edibles.

Having spent countless hours in the kitchen, I've passionately explored various cookie recipes, and this creation stands out as one of my favourites. The delightful combination of these flavours not only enhances the traditional chocolate chip cookie but also offers a smooth and enjoyable consumption experience.

Ingredient Substitutions

  • White Granulated Sugar: Coconut sugar can be used in place of white granulated sugar to provide a more complex, caramel-like flavor. It’s less processed and has a lower glycemic index, making it a slightly healthier option. Coconut sugar will add a richer depth of sweetness that pairs well with the brown sugar and cinnamon in the cookies.

TIPS & TRICKS

  • Leave your egg out before making these and let it get to room temperature. The egg itself will combine better with the rest of the wet ingredients!
  • When measuring the chocolate chips, if you’re a big chocolate fan, measure with your heart!

Ingredients

  • 1 cup flour
  • 1 cup rolled oats
  • 1/2 cup melted cannabis butter
  • 1/2 cup brown sugar
  • 3/4 cup white granulated sugar
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 egg
  • 1/2 tsp cinnamon
  • 1/2 tsp baking soda
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 375F.
  2. Combine the brown and white sugar into a large bowl.
  3. Add the melted cannabis butter to the sugars and mix well.
  4. Add the egg and vanilla extract and mix until your wet mixture is well combined.
  5. Take a sifter, and sift the flour, cinnamon, and baking soda into the wet ingredients.
  6. Using a silicone spatula, gently fold the dry ingredients to the wet.
  7. Add the chocolate chips and oats.
  8. Gently fold in the ingredients together.
  9. Using an ice cream scoop, or you use your hands if you don’t have one - scoop or roll the dough into balls 2 inch diameter thick. This will give you big cookies that are super satisfying to break off. Place the dough balls onto a non-stick baking sheet or any pan with parchment paper.
  10. Bake the cookies for 12-15 minutes. Once the cookies start to brown, remove them from the oven.
  11. Allow the cookies to cool before enjoying.

Tip: Store the cookies in a glass container. Whenever you want to enjoy a cookie, microwave it for 15-20 seconds to re-soften the cookie.

Q: Can I make this recipe vegan?

A: You could definitely make this recipe vegan, you’d just need to make some substitutions for the egg and the butter. Applesauce works as a great substitute for egg (and you don’t taste the apple), and you could infuse a plant-based butter rather than standard butter!

Q: How long does this recipe take to kick in?

A: Cannabis butter is considered to be a cannabis edible, which means that it has to be ingested and processed by your liver before heading up to your blood brain barrier. The onset of cannabis edibles can range from person to person, and can also be impacted by a variety of factors, such as one’s metabolism. Generally cannabis edibles can take anywhere from 30 minutes all the way to 2 hours for the onset, and the experience can last between 4 to 12 hours.

Q: How long will these cookies keep?

A: If you have lots of leftovers, store your cookies in a glass container. They should last fine for about a week! If a week goes by and you still have some left, pop them in the freezer and microwave for 15-20 seconds whenever you want one.
