  • Coconut Sugar: If you don’t have coconut sugar on hand, feel free to use regular sugar or even brown sugar. I prefer coconut sugar for this recipe because of the added coconut flavour but you do you!

TIPS & TRICKS

  • Leave the popsicles in the freezer for as long as you possibly can to ensure maximum hardness. If you like a softer popsicle though, feel free to eat after freezing for a few hours.

Ingredients

  • 1 can coconut cream or coconut milk (cream will give a more milky texture)
  • 3 cups fresh pineapple chunks
  • 1/4 cup coconut sugar (you can add more sugar if your pineapples aren’t very sweet)
  • Infused coconut oil

Instructions

  1. Blend the pineapple chunks until it becomes a wet consistency.
  2. Add the coconut cream, coconut sugar, and infused coconut oil to the pineapple blend and whisk well.
  3. Add the mixture to a popsicle tray and freeze for 2-3 hours or until hardened.
  4. Enjoy!
